Toasting Methods
Mastering the level of toasting allows us to cater to the individual profiles of the wines being produced by each of our partners.
We use traditional, wood-firing methods and offer toasting levels based on length and intensity: Light; Medium; Medium Plus; and Heavy.
In parallel with this, we are happy to adjust the toast according to the demands of certain wines. These tailored options have created longer, specialised toasts which preserve the wine's fruit flavours and its minerality, but tone down the oakiness. The following extra-long toasting levels, which reflect these characteristics, are available: Light Long (LX); Medium Long (MX); Medium Long Plus (MX+); and Heavy Long (FX).
